Beef Stew
Slow-cooked tender beef with vegetables in rich tomato sauce

Ingredients
- • 500g beef, 2 carrots, 1 onion, 1 clove garlic, 500g potatoes, 1 tin chopped tomatoes, 1 stock cube, 1 tsp dried herbs, 1 tbsp flour, oil, salt, pepper
Method
Brown the beef in a pan with a little oil. Add chopped vegetables and flour, mix well and cook briefly, taking care the flour doesn't stick. Stir in tomatoes, water, stock cube, and herbs. Transfer to the oven and cook at 180°C for at least 1 hour until the beef is tender and the sauce has thickened.

Tips for grown-ups
- • Shin beef is best for slow cooking, cut into even-sized pieces if needed
- • Can be made in a slow cooker: ~4-5 hours on high or 7-8 hours on low
- • Try substitutions like sweet potato or add peas/mushrooms
- • Cover while cooking for a softer, saucy stew; uncover for a thicker finish
- • Browning the meat first adds extra flavour but can be skipped
- • Great recipe for teaching patience and long cooking processes
