Bean Quesadilla
Cheesy bean-filled tortillas toasted until crispy and melted

Ingredients
- • 1 tin beans in water (drained), 1 tsp smoked paprika, 1 tbsp tomato puree, 100g cheese, 1 tin sweetcorn (drained), 4 tortillas
Method
Mash the beans in a bowl. Add paprika and tomato puree and mix. Stir in sweetcorn and grated cheese and season to taste. Spread the mixture onto a tortilla and top with another tortilla. Cook in a pan on medium heat until golden, then flip and cook the other side until melted. Repeat and cut into slices.

Children should cook with appropriate adult supervision. Take care around heat, sharp tools and allergens.
- • Pan will get hot, supervise when toasting and flipping the quesadilla
- • Teach them how to use a grater carefully to avoid fingers
- • The middle will be hot and cheesy when eating, so let it cool a bit first

Tips for grown-ups
- • Mashing the beans can take a bit of pressure and may require some help. Microwaving beans first makes mashing easier, and aim to mash most beans with some whole beans remaining
- • Most beans in water work well (black, kidney, pinto are most authentic)
- • Add extra spices like cumin, garlic granules, oregano to the beans for extra flavour
